Its quick, easy, and just delicious.
Life is busy enough, and one of the things I hear consistently from clients is how they want to eat better, but time gets away from them, and fair enough. Although taking care of ourselves should always be the priority, what happens is we look at the must do’s before ourselves. This is the kind of healthy eating that keeps you in the game with no fuss and taste to boot.
The star of this recipe is fats. Yup, fats. We need more of them. Everything from brain health, to cell protection, hormone health and the list goes on. “Fat” has been vilified for years but is finally coming into its own. This is the perfect meal to start your day with balanced blood sugars, soluble fibres, and energy. This is the slow burn, not the crash and burn and I know we all could use a little more of that.
RECIPE

INGREDIENTS
- 1 cup Coconut Milk
- 3 tbls Chia Seeds
- 2 heaping Tablespoon Shredded Coconut (unsweetened)
- 1/3 cup Macadamia Nuts
Topping (optional…but really)
- Canned Coconut Milk
- Shredded Cocnut
- Crushed Macadamia
- Drizzle of Honey
METHOD
Using your cup or mason jar, fill with your coconut milk, chia seeds, shredded coconut.
Stir to get all those chia seeds soaking up evenly.
Add in half your macadamias.
Allow to set in fridge. You can make this well ahead or the day of..will take about 10 minutes to set.
With your canned coconut milk, you want to use the creamy stuff that seperates from the water. You can divide the two ad store for future uses, smoothies etc. Taking a nice heaping tablespoon of the cream, add to the top of your chia.
Sprinkle the crushed macadamia, an extra sprinkle of coconut and your honey drizzle.
