I love a national food holiday just like the next person, seriously who came up with this stuff?! but when I saw national vanilla milkshake day coming up, I thought, bam, lets combine a few of my favourites, Vanilla (i was either a bubble gum or vanilla ice cream kind of gal), Shakes, and well…Kelis. Oh how my marriage to hip hop weaves throughout my life…

Anywho, this is a quick easy, dare I say nutritious milkshake that def can help you wash down a good meal, don’t save it for desert…theres no need to with a few servings of vegetables. Yup, sick of me yet? Cauliflower bomb about to hit again.

Put on that poodle skirt, pump up the jams and shake shake shake it like a polaroid picture….

RECIPE

gfree, vegan, serves 2-3

INGREDIENTS

  • 1 cup coconut meat
  • 1/4 head of cauliflower steamed
  • 1.5  cup Almond milk
  • 2 Vanilla bean seeds
  • 2 tbls brown rice syrup
  • 2 tbls light maple syrup
  • 2 tbls coconut oil
  • 1/2 cup ice
  • few twists of himalayan salt

Whipped topping

  • 1 can of full fat coconut milk (refridgerated)

METHOD

Prep: Steam and cool your cauliflower. refrigerate your canned coconut milk overnight

In your high speed blender or Vitamix, combine all ingredients except coconut oil which you can add last. Taste test along the way to see if you want to adjust more sweetener, or salt.

Get your canned coconut milk from the fridge open and use only the solid milk parts. Place in a bowl and whip it up.

Pour into a remarkably fancy jar, top with your coconut whip and add toppings to your liking!
