Ok, I am going to keep this short, because literally you are going to want to run to make these.
The perfect summer treat that is refreshing, satisfying and decadent all in the same. And the star of the show, Avocados. Yeah that is right, the feature player in this freezer bar is fats, the healthy ones, ya dig.
Never was a dessert so healthy and humble.
I’m big in promoting fats. I feel as though I need to change that bad rap and make it good. From the brain boosting benefits, healthy hormones, and not to mention even slimmer waistlines, the avocado is one hell of a fat and its good for so much more than just your toast. I swear.

RECIPE

INGREDIENTS
BASE
1/2 cup Sunflower Seeds
1/2 cup Pumpkin Seeds
1 Tbls Cacao Powder
1.5 Tbls Coconut Oil
10 Dates
1/4 cup Hemp Hearts
Himalayan Salt
MINT LAYER
2 Avocados
1 cup Frozen Cauliflower
3 Tbls Maple Syrup
1 Tbls Peppermint Oil
1 tsp Vanilla Extract
CHOCOLATE LAYER
1/4 cup Coconut oil
1/4 cup Cacao Powder
1 scoop Chocolate Protein such as Vegan Fermented Protein
2 Tbls Maple Syrup
cacao nibs to sprinkle
METHOD
In your blender or food processor combine your base ingredients until a crumbly dough is formed. It should stick between your fingers when pinched together
In order to make blending easier, layer your liquid ingredients first before the dry.
Line a square baking pan with parchment. Mine was about 8 x 8.
Empty dough into the pan and press down firmly to create and even base layer. Set in Fridges
This one is easy, place all ingredients in the vitamix and blend, blend baby, until nice and creamy and smooth.
Pour Over your base layer, smooth surface, and place pan in freezer to allow to set for 1-2 hours or more
Whisk together your chocolate sauce until silky and smooth, then pour over top of your mint layer and place back in the freezer.
After about 15 minutes, toss on top your cacao nibs and himalayan salt that are going to give a nice crunch and texture to your bars.
Store in freezer. You can either eat these fresh out the freezer or my preference, let thaw for about 10-15 and they become all soft servy and delicious
