The incredible edible un-egg
Yup, here it is, the tofu scramble. We’ve seen it, heard i, and yet skeptics still kind of cringe at the thought. Come to know it now, I like it even better than I ever did of eggs. By a long shot.
It’s simple, protein packed, and really so delicious.
I love using the Wildwood brand which is readily available. Their tofu is not only organic, but sprouted, which is going to help for all those people with digestive problems of legumes and altogether will increase bioavailability of all the nutrients.
This one is loaded. With flavour, superfoods and fibers and as mentioned…protein. Which is helpful when another person asks, Where do you get your protein?
You don’t have to be a vegan to enjoy this, just an attitude to give it a shot. You may just be surprised. I told you so
Why eat this? This savoury breakfast gives you a protein punch as would a serving of your regular meat, at the same time, so many minerals and vitamins that will help build strong bones, muscle, and will be easier for your body to digest and take advantage of.
RECIPE

INGREDIENTS
1 tbls coconut oil
1 block firm/extra firm tofu
2 tsp turmeric
1/4 cup nutritional yeast
1/2 cup fresh salsa
1/2 cup black beans
1/2 cup earth island cheese shreds (optional)
1 avocado
METHOD
Here’s another reason to like Tofu… You can’t screw it up.
I’m serious, making eggs sometimes can feel like an art, with tofu, you neither have to wath to make sure its cooked enough, or too much. Its heating through and serving pretty much.
In a medium pan over medium heat, melt your coconut oil.
Crumble your tofu into little egg like pieces… it’ll do this naturally.
Stir in your tumeric, salsa, nutritional yeast and salt & pep.
Heat through.
Add in your black beans and cheese to warm through and melt.
Serve once cheese melt and is gooey.
Top with avocado, and boom.
