Aloha on the brain, as it most often is at Christmas time for me. Perhaps it’s my upcoming trip, Vancouver winters or my affinity for coconut. But these plant based power treats are really hitting the spirit of aloha in me.
This creation was the adaptaion of a larger recipe of a coconut cream pie, and when one lovely retreater at my last endeavour mind body and soul, miss Mac, mentioned how much she loved the crust, I thought I would explore this. Well, these little snowball nuggets were created.
Nutrient dense, flavourful, comforting and filled with potential for other adaptation. And super simple too. These power balls have made the rounds from lululemon and HQ at Aritzia, they went over well with the fashion set in which I included a pinch of Maca for energy, and also probiotic to strengthen gut health. Or what about swapping out the Vanilla for a splash of Peppermint (you won’t need as much fyi) for candy cane snowballs?!
Maybe Santa is getting a new plate of cookies with his milk this year.

RECIPE

INGREDIENTS
2 cups Gluten Free Oats
1/2 cup Shredded coconut
1/2 cup Coconut Oil
1/2 Cup raw almonds
2 tbls Vanilla
1/4 cup Honey
pinch of sea salt
METHOD
Guys, this is rated E for easy.
Load up your vitamix or blender. Setting in the liquid items first for easier blending.
Pulse and blend until mostly uniform and blended.
Spoon handfuls into palm and roll into balls
Dunk balls in a plate of shredded coconut to cover the outside.
Place on a parchment lined baking sheet
Set and store in Fridge,
