Remember the days of digging into the raw cookie dough batter and your mom swatting you away saying you’d get worms? Yeah fear not. You now have the ability as an adult, to do this as much as you want, whenever you want… but it has to be plant based of course. Have you ever heard of such a good reason to go green? yeah me neither.
Anyways, these little bombs hit the spot. Tasty, nutritious, and guilt free. Oh but you should never eat with guilt though now should you. We know better right? If we make the wrong step, its much better to embrace it than fight it. But more on that another time.
These cookie dough balls are so easy for that quick afternoon delight, and will keep you fuelled on good fats, tastes and feels.

RECIPE
INGREDIENTS
2 3/4 cup of Rolled Oats
3/4 cup unsweetened coconut
1/2 tsp Salt
1/4 cup Coconut Oil
1/2 cup Maple Syrup
2 Tbls Flax Meal
2 tsp Vanilla Extract
1 cup Vegan Chocolate chips or cacao nibs
1/4 tsp cinnamon
1/4 tsp allspice
1/4 tsp nutmeg
- add ins hemp, maca, dates, dried fruit,
METHOD
This recipe is rated E for easy and Dee for delicious.
mix your ground flax in 6 tbls of water and set aside.
Meanwhile, split your oats in two. about 1 and 1/4 each. Put one batch in your vitamix or processor, and blend into a flour. Put the other in the bowl as is. Once flour is achieved, dump in bowl with whole rolled oats. Add in all your other dry ingredients.
Then mix together all your wet ingredients, including your flax that has been sitting aside for about 10 mins, in a bowl. Dump into your dry ingredients and mix away. I use my hands. Easy and dirty.
Toss in your chocolate chips, and any of your add ins. Give a twist or two more of your himalayan salt and your done.
Place bowl with dough in your fridge. Set aside for about 30-60 minutes. This is just going to help your form your dough balls.
Once cooled, remove from fridge, and start using heaping tablespoons of dough rounded between your palms. Place on tray and set in fridge again.
You can store your cookie dough bites in the fridge or freezer until. They keep very well, though may become dryer after remover from the freezer.
