You know what they say… if you can’t stand the heat….
Get out the kitchen.
Not I my friends. Not I. For I have to deliver cool, delicious, healthy things you’re way. And oh I’ve got the quencher.
I’ve had a thing for lemonade, like, well before Beyonce did. I mean we are talking about lemonade in the baby bottle swag. I’m really not kidding. I was such a picky eater, drinker. I would not touch fruit, or juices, milk or pretty much anything else that was put in front of me, but give me lemonade and I was read’ to go.
So when I thought of some cool ways to beat the heat, I thought of this nod of nostalgia. To the 80’s to the neon, and thinking that maybe it’ll help you throw it back a few degrees too.
K cool, and sweet.

This recipe will make at least a dozen. You can save the Leftovers in the fridge and pour into moulds again once the first batch is set.
- 1 can of Light Coconut Milk
- 1 cup of Ice
- 3/4 cup coconut yogurt (vanilla)
- 2 Tbls Maple Syrup
- 2 Tbls Coconut oil, melted
- 1 Lemon zested
- 1/2 cup berries (i used strawberry and raspberry)
This really doesn’t require a recipe, because you are above that, and I like that about you.
You throw all these things in sans berries and vitamix the shit out of it,
Pour at least half out, then add in your berries and blend it up.
The you have your two layers.
If you want to keep the colours very seperate you can let the first pour chill for 10-15 before pouring the berry mixture, otherwise, cause you don’t have time for that, pour pour pour away. You can add in a very thin slice of lemon if you are looking for artistic awards, but really, thats not what its about.
Let set for several hours then get your pop on, pop off.
