This is not glamour food, this is real food…

You know those quick start muffins, well these are kind of like that. But in cookie form. And better. Oh yeah, and probably way healthier for you too.

Quick carbohydrates, and protein, and a touch of heathy fats. These moist little bad boys will have you eating cookies for breakfast all week. I can almost guarantee it. Well, at least that was me.

Super simple, moist, nutrient dense, and 100 times better for you then those “healthy muffins” Or powers bars.

Bake. Eat. Repeat.

Now this is definitely “mom” tested. Not sure yet if it’s kid approved. But if you wanna try, let me know. It’s hard removing refined sugar from those little nymphs. They taste the health right away. 😉

Why you should eat this? This is FUEL food, the kind to snack on the go or to start or end a workout on. With no refined sugars, and a beautiful mix of proteins from hemp and almond meal, you will not have a spike in blood sugars, but rather sustained clean, yes I hate the word, but clean fuel. the alternatives that usually have “health” in the name are trying to be something they are not. This is the real deal. Nourishing but still light, fuel food.

RECIPE

GFree, Vegan, Refined Sugar Free

INGREDIENTS

  • 2 cup oats (gfree)
  • 2/3 almond meal
  • 3 banana
  • 1/4 hemp hearts
  • 1/2 cup shredded unsweetened coconut
  • 1 tsp sea salt
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/4 cup coconut oil (softened not melted though)
  • 1/2 cacao nibs
  • 1/4 dried fruit (I just chopped up some dates)

METHOD

Heat oven to 350

In a medium sized bowl, mash your banana so it’s nice and smooth and must chunks are gone. Dump in your oats, almond meal, coconut, hemp hearts, spices, salt and coconut oil. Mix all together. Hey, this may not be food safe, but get your hands messy and get in there. Then add in your cacao nibs and dried fruit.

I use an ice cream scooper to drop dollops of your dough on a parchment lined baking sheet. I like big guys, so I use a big scoop. Put in the over and bake for around 15. Half way through you can go in with a fork and spread the cookies down a bit to Cooke more evenly. The beauty is, because there is no egg in there, a soft gooey middle is totally a ok. So just brown the tops and your golden. Literally. Store in Tupperware, or purse. And go.
