Somewhere between a doughnut bite and an energy ball, lays this little nugget.

Oh yes. All the flavours of your favourite gingermen, with added health benefits and none of the harmful ones of the former.

One… who doesn’t love a good gingerbread man? Two… who doesn’t love raw cookie dough? If you answered yes to one or more of these questions, you too will enjoy these little festive morsels.

Easy to make, nourishing, healthy and festive. fa la la la la la la la la

 

Why make this? It’s the perfect recipe to keep snacking on at home or out that will keep you in the spirit without bringing down your mood with refined sugars and flours.  What does this mean? No sugar crashes and in fact extra blood sugar stabilizing qualities with the addition of all that cinnamon. Oh and Maca? Thats going to keep you going, energy and hormone balancing. All the therapeutic spices to keep you festive and steady this season.

RECIPE

makes 12 large or more mini’s

INGREDIENTS

1.5 cups gfree Rolled Oats

1 cup Almond Flour

10 Dates

1/4 cup honey

2 tsp Mesquite

1 tsp Maca

1 tsp Cinnamon

1/2 tsp Ginger

1/8 tsp Nutmeg

1/2 cup Coconut Oil

a healthy pinch of Himalayan salt

METHOD

E for Easy

In your blender or Vitamix, pulse process all your dry ingredients until crumbly and even consistency.

Add in your wet ingredients, and your dates.

Blend until a nice paste appears. You’ll have to do some scraping along the way, but you’ll get there, and it’ll be worth it…

Take an ice cream scoop or a tablespoon and portion out round mounds onto a parchment lined baking dish. You can roll them into balls at this time.

Place in freezer for about 10-15 minutes.

Now you can melt a little extra coconut oil.

Take your balls out of the freezer, no one needs a frozen ball.

now you can use the coconut oil to either drizzle over top and make lines… the chilled balls will help solidify and set the oil fast making it a lovely little topping. I also chose to dunk mine to create a bit of a glaze and then sprinkle some added cinnamon. The choice is yours.

Now you can store in the fridge and munch when the desire hits you. They also store great in the freezer.
